Bubblegum Alley, San Luis Obispo, CA

We are back from our epic road trip! On Sunday evening we cruised in to Hermosa Beach and felt like we were seeing home with new eyes. We saw and did so much in just 2 weeks. It's amazing the beautiful places and experiences that exist so close to home, just a road trip away. Over the coming weeks, I'll try to share some highlights from our trip, starting with today's post. Bubblegum Alley is a landmark in San Luis Obispo, California where residents and visitors to the city stick their chewed-up gum to an ever-growing wall of bubblegum. It's disgusting and fascinating all at the same time.

Santiago Sunsets

One thing that blew me away in Chile were the sunsets. They were incredible! Each night, we'd be filming at a different location and around 6PM, the light would start to fade and slowly, the sky would transform into an incredible light show. I was constantly amazed by the massive reflection of the sun on the clouds, blanketing the whole sky above me. Every evening was such a treat and it made me so grateful for the natural beauty of the earth.

Fine Dining in Santiago, Chile

While in Chile, I had the chance to experience some pretty great cuisine. I'm usually more into cooking new foods, but this trip gave me a chance to taste new foods that were way out of my normal palette experience, including SEA URCHIN! Yes, I tried sea urchin and it tasted like the ocean. In Chile, they serve a lot of seafood and Peruvian food is also very popular. Traditional Chilean food is fairly bland so a lot of the restaurants incorporate different influences into their cooking making for a unique experience wherever you go.

Visiting Santiago

For anyone who follows me on Instagram, you know that I was recently in Santiago, Chile. While the majority of my time was spent working (shooting a commercial), I did have the chance to explore the city (a tad), experience the culture, and enjoy the beautiful mountainous scenery. Below are some photos from my trip if you'd like to see. 

Everywhere we went, I was so inspired by the beautiful Andes mountains that served as a great backdrop for most of our locations. The way the mountains were snow-capped only at the top made it look like they were floating at times. The scenery actually reminded me a lot of Utah, where I went to college.

This was the view from my hotel room. Santiago has a very European-feel with a nice South American vibe tied into it. It's very clean and the sidewalks and large and beautifully tiled. There are also dogs that wander around the city, but they are not scary or sad-looking. The ones I saw were actually quite cute!

Santiago is home to the tallest building in all of Latin America, the Gran Torre Santiago. We tried to visit the top, but it's not open to the public, possibly due to the fact that it's still under construction.

On our way to the airport, we made a quick stop at Centro Artesanal Los Dominicos, a very cool, authentic-feeling shopping plaza. It was filled with merchants selling various Chilean goods, including alpaca knits and lapis lazuli jewelry. There was even a menagerie in the middle with peacocks and other birds co-habitating. I loved the vibe here.  

While it's hard to capture in a photo, one of my favorite parts about being in Chile was being able to use my Spanish. I'm definitely no pro, but I still got it! (So long as people talk slowly and are patient in listening to me. ;)

In the summertime, I'm all about casual, comfortable outfits with pops of bright colors. This bright wintergreen color recently caught my eye at an H&M in Chile and I was happy to bring it home and sport the happy color here in California.

French Toast Roll-ups


If Stuffed French Toast and Churros got married, they would make a beautiful baby called French Toast Roll-ups. This delectable breakfast treat is a simple yet delicious idea that makes breakfast more fun. Isn't food always better when you can eat it with your hands?

French Toast Roll-ups
Yield: 8 French Toast Roll-ups (about 3-4 servings)
Time: about 25 minutes

INGREDIENTS:

8 slices soft, sliced sandwich bread
Peanut butter, jelly, nutella, cream cheese, dulce de leche, or any other delicious filling you can think of
2 eggs
3 tablespoons milk
1/3 cup granulated sugar
1 heaping teaspoon ground cinnamon
Butter, for greasing the pan
Maple syrup, for serving

DIRECTIONS:

Trim the crust from the bread and flatten it with a rolling pin. Place 1-2 teaspoons of your desired filling an inch from one end of the bread and spread it across in a straight line. Roll the bread up tightly and repeat until all bread slices are complete.

In a shallow bowl, whisk the eggs and milk until well combined. In a separate bowl, mix the cinnamon and sugar. Melt one tablespoon of butter on a skillet set over medium-high heat.

Add rolls to the egg mixture and coat on all sides. Immediately transfer dipped rolls to the hot skillet and cook until lightly browned on all sides. Use tongs to turn. Add more butter to the pan as needed. Immediately add hot rolls to the cinnamon-sugar mixture and roll until completely covered. Serve with maple syrup for dunking.

28!

On June 28 I turned 28! My golden birthday! It was one of the more interesting and unique birthdays I've had seeing as I spent it in the Southern Hemisphere and away from any of my close family or friends since I was traveling for work. Nonetheless, it was a fun and happy and memorable day. In my opinion, any time I can spend exploring a new city is an amazing day. Highlights of the day (for better or worse) included: a trans-equatorial flight to Chile, lost luggage, rain (in June!), exploring & walking around Santiago, dealing with pre-production logistical nightmares for an approaching shoot, a gorgeous bouquet of flowers waiting in my hotel room, and a fabulous Peruvian-Japanese dinner with a great group of work colleagues.

I've always looked forward to turning 28 and I'm feeling incredibly grateful lately for the life I have. I feel satisfied and content and happy. And that is nice. Life has been good to me. Really, really good.
