California Fish Tacos

I am a huge fan of fish tacos. They're delicious, healthy and when I eat them, I feel like I'm transferred to a warm, breezy beach. I've enjoyed many a fish taco at various restaurants but had never mastered this great dish in my own home until last night. OMG... these are delicious and simple! Warning: they may stink up your home a little bit, but it's worth it!

Yield: about 8 tacos
Total Time: about 45 minutes


{for the marinated onion}

1/2 red onion, diced
About 1 1/2 cups red wine vinegar

{for the fish}

1/4 cup olive oil
1 1/2 teaspoons chile powder
1 1/2 teaspoons dried oregano
1/2 teaspoon ground cumin
1/4 cup lightly packed fresh cilantro leaves, chopped plus more for garnish
1 jalapeño, stemmed and chopped
1 pound flaky white fish (mahi mahi, cod, sole, tilapia are all good choices)

{for the finished product}

8 fresh corn tortillas
Sliced avocadoes
2 limes, cut into quarters


Start by making the marinated onion. Dice onion and cover in a small bowl with enough red wine vingar to cover (about 1 1/2 cups). Set aside and let sit for at least 30 minutes or up to several weeks.

Next, marinate the fish. In a small bowl, combine olive oil, chile powder, oregano, cumin, cilantro, and jalapeño. Gently mix, then pour over fish, making sure to coat the fish on both side. Allow to marinate for up to 20 minutes. (For advance preparation, dump marinated fish in a large ziploc bag and let sit in the fridge for up to 24 hours.)

When ready to cook, heat a large non-stick pan over medium-high heat and lay fish on pan. Season with salt. Let cook for 4 minutes, then flip and cook an additional 2 minutes. Flake the fish into a bowl and repeat until all fish is cooked.

Assemble the tacos. Warm the tortillas by sandwiching them between two damp paper towels and heating in the microwave for 30-45 seconds. Place a heaping spoonful of the marinated flaked fish in the center of a tortilla and top with marinated onions. Then add avocado and salsa. Serve with a lime wedge and your favorite beverage (San Pellegrino Limonata for me!).
