Burrito Bowl with Seasoned Ground Turkey

Inspired by Chipotle and the ingredients I had in my kitchen, this burrito bowl was born. Ground turkey is my favorite substitute for ground beef, especially when used in Mexican dishes. With some taco seasoning, I can hardly tell the difference between turkey and beef.

Burrito Bowl with Seasoned Ground Turkey
Yield: 6 servings
Time: about 1 hour

1 lb. ground turkey
1 Tablespoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (less if you have a more mild palette)
2 teaspoons cumin
1/2 teaspoon oregano
2 garlic cloves, minced or 1/4 teaspoon garlic powder
1/8 teaspoon crushed red pepper flakes (optional)
1 teaspoon salt
1 teaspoon pepper
1 cup water
1 teaspoon corn starch
1 can black beans
2 cups brown rice
1 tomato
1 avocado
2 oz. shredded cheese
1/2 cup salsa
Chopped cilantro
Chopped green onions

Prepare rice, according to directions.

Over medium heat, brown ground turkey until fully cooked. Add next nine ingredients, water, and corn starch and simmer until all spices are cooked into the meat, about 10-15 minutes.

Heat beans in a small saucepan over low heat, until warmed through.

Make your burrito bowl. In a shallow bowl, pour 1 cup of cooked rice and spread on the bottom. Add 1/2 cup beans, followed by 1/2 cup seasoned ground turkey. Top with chopped tomato, shredded cheese, sliced avocado, and salsa. Sprinkle with pepper and garnish with cilantro and green onions, if available. Enjoy.

Springing Forward

Shirt/Skirt: Target, Shoes: Steve Madden, Blazer: Nordstrom (TBD), Necklace: Stella + Dot, Sunglasses: BP

I purchased this skirt for Easter and it's been on regular rotation in my closet ever since. It's comfortable and the bold print makes me feel bright and happy. I paired it with a more structured blazer to make the look feel a bit more unexpected.

I love adding natural elements to my wardrobe. Whether it's an earthy-brown leather belt, chunky wooden jewelry or a hand-woven cotton scarf, natural clothing and accessories make me feel a little more grounded and a little more Bohemian, which I love.

Today, Sweet Relish is offering a giveaway of three naturally beautiful bangles from Mango Tree Bangles. Mango Tree Bangles is a really cool, eco-friendly company who sells hand-carved and hand-painted bangles made from organic Grade A mango trees. The mango tree is only timbered for use when the tree can no longer yield fruit.

To enter the giveaway, you must sign up for Sweet Relish (which you won't regret...trust me). You can also secure extra entries by liking FEST on Facebook and following @catfishback on twitter. Enter using the widget below. The giveaway will last one week and the winner will be announced next Friday. Good luck!
