New Year's Day is all about being lazy, yet productive. The New Year signals a fresh start which, for many, motivates them to get organized, clean up and get things done. Yet, it occurs the day after one of the biggest party nights of the year so are we really expected to cook? These mini breakfast sandwiches are so so helpful to have on hand for times when cooking a meal just does not seem like a welcome experience. And they are delicious!
Mini Breakfast Sandwiches
Yield: 18 sandwiches
Total Time: about 3 hours
18 small Coriander Turkey Sausage Patties
18 small Homemade English Muffins
3 cups shredded cheese
salt and pepper
Prepare turkey sausage patties and homemade English muffins. (These can be made up to a day in advance and stored in the fridge.)
Heat a large skillet over medium heat. Spray with non-stick cooking spray. In a large bowl, whisk together 9 eggs. Add shredded cheese to the mixture and season with salt and pepper. Pour half of the mixture into the heated skillet and let cook for about 5 minutes or until eggs are firm. Using a spatula (or two), flip the egg mixture over and continue cooking until fully cooked through. Slowly slide cooked egg disk onto a cutting board and let cool for a few minutes. Using a small cup, cut circles from the cooked egg. Combine each egg circle with sausage patties and English muffins to create a breakfast sandwich.
Repeat with remaining egg mixture.
When all breakfast sandwiches are made, you may eat them or you can store them in the freezer for a convenient snack later on. To store, wrap each sandwich individually in plastic wrap, then place in a freezer bag. When ready to eat, remove sandwich from the plastic wrap and open up on a plate. Heat in a microwave for about 90 seconds. Enjoy!
