Caramel Apple Cider

Sometimes I have a hard time with winter weather. Christmas is wonderful and a great distraction from the cold temperatures but once the holiday hustle and bustle is over, I get easily bummed out. The cold, the darkness, the pale skin. I'm just not my best self in the winter. But this year, I'm trying something different. I'm going to drink as much hot chocolate and caramel apple cider as my little heart desires. Hot drinks do an amazing job of warming your whole body. So far, I've been able to avoid the winter blues and I'm hoping it stays this way. 

Caramel Apple Cider
Yield: about 6 cups of cider
Time: about 15 minutes


1/2 cup brown sugar
1/2 cup water
1 tablespoon cinnamon
8 cups apple juice


Start making a simple syrup. Combine the brown sugar, water and cinnamon in a saucepan over medium heat and simmer until brown sugar dissolves. (Be careful not to simmer for too long. You don't want the mixture to thicken.) Remove from heat and let cool. Combine apple juice with syrup in a large container, like a glass bottle or mason jar.

When ready to serve, shake mixture and pour into a mug. Heat in a microwave for about 1 and 1/2 minutes or until cider is warm enough to your liking. If you like, top with whipped cream and sprinkle with cinnamon. Enjoy!
