Supersalad


I mentioned earlier that Bradford and I have been striving to eat more and more "superfoods". There are a lot of different lists of said superfoods out there, but we've been studying the lists and picked out our favorites. This list provides a pretty comprehensive overview of what to expect on a list of superfoods. We've found that one of the easiest ways to eat superfoods is to throw everything together in a salad. Over the coming months, I hope to learn more exciting and innovative ways to serve these foods, but I think this is a delicious start.

Supersalad
Prep Time: about 15 minutes

INGREDIENTS:

(choose from any of the following)

Cabbage
Kale
Brussel sprouts
Broccoli, steamed and chopped
Nectarines, chopped
Cherry tomatoes, cut in half
Pumpkin seeds
Dried cranberries
Corn, cooked
Chicken, chopped
Your favorite salad dressing

DIRECTIONS:

Choose your favorite ingredients from the list above and mix together. Toss with your favorite salad dressing. For a simple dressing, drizzle olive oil, lemon juice, salt and pepper on ingredients and toss well.
