Red, White & Blueberry Cookies

The 4th of July is easily one of my favorite holidays and I love to show my patriotism in creative, delicious ways. Last year, I baked a cake and decorated it with strawberries and blueberries to look like an American flag. This year, since I'll be traveling to San Diego for the 4th, I thought I'd come up with a treat that is a little easier to transport. And so these red, white and blue cookies were born. These cookies add an extra punch of tartness. They're a crowd pleaser and would make a great addition to any patriotic barbecue, picnic or day at the beach. 

Red, White & Blueberry Cookies
Yield: about 36 cookies
Prep Time: 10 minutes
Baking Time: 10 minutes
Total Time: about 30 minutes


2 1/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter at room temperature (2 sticks)
3/4 cup granulated sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
3/4 cup white chocolate chips
3/4 cup blueberries
3/4 cup dried cranberries


Pre-heat oven to 350 degrees.

In a medium bowl, combine flour, baking soda and salt. Set aside. In a large bowl, beat together butter, sugars and vanilla. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture until well combined.

In a small bowl, combine blueberries with 2 teaspoons of flour. Using a wooden spoon, add blueberries, white chocolate chips and dried cranberries to the cookie dough. Drop cookies by rounded tablespoon onto ungreased cookie sheets. Bake for 9-11 minutes.
