Mexican-style salad bar for my Memorial Day party. Here is the recipe for the pork used in the salad. It is divine and can be used for salads as well as quesadillas, burritos, tacos, or you can eat it all on its own. Beware, this recipe makes a lot so be prepared to feed the masses or eat pork for the next two weeks.
Sweet Mexican Pulled Pork
From Just Cook Already
Prep Time: about 10 minutes
Cooking Time: 18 hours
Total Time: a little over 18 hours
5-6 lbs. pork roast (may use shoulder)
12 oz. taco sauce*
1 Tablespoon cumin
1 cup brown sugar
20 oz. Coca-Cola (not Diet)
*If you don't have taco sauce, just combine one packet of taco seasoning with 12 oz. of tomato sauce.
Season the roast with salt and pepper and place in the slow cooker. Add enough water to cover half the roast. Cook for 12 hours on low. After 12 hours, pour out about 3/4 of the water and drain off the fat. Then, add the rest of the ingredients, stirring to combine, and cook on low for another 6 hours. After 6 hours, remove pork from the slow cooker and shred using two forks. Place pork back in the slow cooker and mix well with remaining ingredients.
Eat with rice, beans and tortillas. Or add it to the best salad ever and enjoy!
