Mexican Haystacks

Have you ever gone to a party with chips and dip and felt like you just couldn't stop putting those chips into your mouth? (Or am I the only one that spends my time hanging out by the food at parties?) Well, did you know that you can have chips and dip for dinner? Ok, this isn't actually a "dip", but when you eat it, you'll get the same satisfaction, but with more substance. With chicken, rice, corn, beans and tomatoes, this meal basically has it all. Enjoy.

Mexican Haystacks
Adapted from Yummy Fun
Yield: about 6 servings
Prep Time: 30 minutes
Cooking Time: 8 hours
Total Time: about 8.5 hours

4 oz. cream cheese
1 cup milk
1/2 cup water
1/2 cup sour cream (may substitute with greek yogurt)
1 teaspoon cumin
1/2 medium onion, diced
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/2 package Hidden Valley Ranch Dip
2-3 frozen chicken breasts
1 can diced green chilies
1 can corn, drained
1 can black beans
1 can diced tomatoes
fresh cilantro

In a crock pot, combine all ingredients except for chicken, beans, corn and diced tomatoes. Heat until smooth and blend until creamy. An immersion blender works well for this. Then add remaining ingredients and cook on low for 8 hours, stirring occasionally. Once the chicken is cooked through, remove from crock pot, dice into 1-inch cubes and return to crock pot.

Serve chicken mixture over a bed of tortilla chips and rice, then top with shredded cheese and freshly chopped cilantro.
