Pesto

There is something so natural and satisfying about cooking with fresh herbs. Someday I hope to have an herb garden. Until then, I have to purchase herbs at the grocery store and do my best to keep them fresh for as long as possible. The great thing about pesto is that you can prepare it ahead of time and store it in your fridge until ready to eat. So if you ever have fresh basil in your fridge and you sense it may be starting to go bad, make pesto! You won't regret it.

Homemade Pesto Sauce
Yield: about 2 cups
Total Time: about 5 minutes

INGREDIENTS:

2 cups packed fresh basil leaves
1 1/2 cups grated parmesan cheese
1 1/2 cups olive oil
2 Tablespoons lemon juice
1/2 teaspoon salt
2 Tablespoons garlic
3 Tablespoons pine nuts (optional)

DIRECTIONS:

Blend all ingredients in a blender or food processor until smooth.

SERVING SUGGESTIONS:

1. Toss with fresh pasta
2. Spread on pizza dough, sprinkle with mozzarella and bake for 10 minutes at 400 degrees
3. Spread on top of cooked salmon

we used all our leftover basil from our herb garden last summer to make pesto and froze it! one of the greatest things ever.
