Picnic Planning: Cucumber-Artichoke Salad with White Beans & Feta


There's something so great about "lettuce-less" salads. While I love and appreciate the health benefits of lettuce (especially spinach!), sometimes I just wish I could eat the "meat" of the salad. This dish lets me do that. The crisp cucumbers keep this salad fresh for a day or two, making it easy to prepare in advance. It's easy to eat, (easy to make), AND it's tasty, making it the perfect picnic food!

Yield: 4-5 servings
Prep Time: 10 minutes

INGREDIENTS:

2-3 small cucumbers (or 1 large cucumber), diced into 1/2-inch cubes
3/4 cup artichoke hearts in oil, diced
3/4 cup (about 8 oz.) white beans, rinsed and drained
1/4 cup feta cheese

DIRECTIONS:

Mix all ingredients together and season with salt and pepper. Store in a plastic container in the fridge.
